Veal with mushrooms

Veal with mushrooms is a classic dish that combines tender veal with savory mushrooms in a rich sauce. Here’s a simple and delicious recipe to make this dish:

Ingredients:

  • 1 lb (450g) veal cutlets or veal stew meat, sliced into thin strips or bite-sized pieces
  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 8 oz (225g) mushrooms, sliced (button mushrooms or cremini work well)
  • 1/2 cup (120ml) white wine (optional, or use chicken broth)
  • 1/2 cup (120ml) chicken or beef broth
  • 1/2 cup (120ml) heavy cream
  • 1 tbsp flour (optional, for thickening)
  • 1 tsp dried thyme or 1 tbsp fresh thyme leaves
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Veal:

    • Season the veal pieces with salt and pepper.
  2. Sear the Veal:

    • Heat the olive oil or butter in a large skillet over medium-high heat.
    • Add the veal pieces and cook until browned on all sides, about 3-4 minutes per side. Remove the veal from the skillet and set aside.
  3. Cook the Aromatics:

    • In the same skillet, add the chopped onion and cook until translucent, about 2-3 minutes.
    • Add the garlic and cook for an additional 30 seconds, until fragrant.
  4. Add the Mushrooms:

    • Add the sliced mushrooms to the skillet and cook until they are golden brown and have released their moisture, about 5-7 minutes.
  5. Deglaze and Simmer:

    • Pour in the white wine (if using) and scrape up any browned bits from the bottom of the skillet.
    • Stir in the chicken or beef broth and thyme. Bring the mixture to a simmer.
  6. Finish the Dish:

    • Return the veal to the skillet and simmer for about 10 minutes, or until the veal is cooked through and tender.
    • If you prefer a thicker sauce, you can sprinkle the flour over the mushrooms before adding the liquid, stirring well to incorporate.
    • Stir in the heavy cream and cook for an additional 2-3 minutes, until the sauce is creamy and slightly thickened. Adjust seasoning with salt and pepper to taste.
  7. Serve:

    • Garnish with fresh parsley and serve the veal with mushrooms over rice, pasta, or with crusty bread to soak up the sauce.
